Our Summer…

With the Ligonier Country Market ended, We at Huckle Bee Farms, want to thank everyone for their support this year.  Without each and every one of you taking the time to stop in and try our product line we would not have been able to grow the way we did.  We now currently have seven different infused honeys and are working on a new one for the holidays…stay tuned to learn more about this new infused honey that will be coming soon!

Our Current infused honeys; Cinnamon, Orange Blossom, Habanore, Blueberry, Raspberry, Root Beer, and mint.


Cinnamon Honey

Spicy cinnamon infused in our raw wildflower honey to bring together the perfect sweet yet spicy flavor combination, great for bagels or hot tea on a cold winter morning.  

With the combination of honey and cinnamon you get many great health benefits.  Tests have shown that the use of cinnamon and honey have an improvement on type 2 diabetes management by creating a steady use of glucose by the body. 

Honey-Soy Broiled Salmon


        1 scallion, minced

        2 tablespoons reduced-sodium soy sauce

        1 tablespoon rice vinegar

        1 tablespoon Huckle Bee Farms Orange Blossom Honey

        1 teaspoon minced fresh ginger

        1 pound center-cut salmon fillet, skinned (see Tip) and cut     into 4 portions
Salmon Coho Fillets, Fresh

        1 teaspoon toasted sesame seeds


  1. Whisk scallion, soy sauce, vinegar, honey and ginger in a medium bowl until the honey is dissolved.
  2. Place salmon in a sealable plastic bag, add 3 tablespoons of the sauce and refrigerate; let marinate for 15 minutes.
  3. Reserve the remaining sauce.
  4. Preheat broiler.
  5. Line a small baking pan with foil and coat with cooking spray. Transfer the salmon to the pan, skinned-side down. (Discard the marinade.)
  6. Broil the salmon 4 to 6 inches from the heat source until cooked through, 6 to 10 minutes.
  7. Drizzle with the reserved sauce and garnish with sesame seeds.

Honey-Apple Cake

Yield: Makes 1 (10-inch) cake


1 cup chopped pecans, divided

2 cups sugar

1 cup vegetable oil

1/4 cup honey

3 large eggs

3 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 teaspoon vanilla extract

3 cups chopped Golden Delicious apple

Honey Sauce

Vanilla ice cream (optional)


1. Grease and flour a 12-cup Bundt pan; sprinkle bottom of pan with 1/4 cup pecans. Set aside.

2. Beat sugar, oil, and honey at medium speed with an electric mixer until well blended. Add eggs, 1 at a time, beating just until blended.

3. Combine flour and next 4 ingredients. Gradually add to sugar mixture, beating at low speed just until blended. Stir in vanilla, remaining 3/4 cup pecans, and apple. Spoon over pecans in pan.

4. Bake at 350° for 55 to 60 minutes. Cool in pan on a wire rack 15 minutes; remove from pan, and place on a wire rack over wax paper. Pour 1/2 cup Honey Sauce over warm cake. Cool.

5. Heat remaining Honey Sauce; serve with cake and, if desired, ice cream.
