Ok, we have a pretty amazing bottle list going. From IPA's to stouts, to sours we have a very lovely selection for either in-house or to go. Please take advantage. The latest offering is not for the faint of heart, but if you fancy a Belgian experience then I think you will be pleased. We managed to score a case of Drie Fonteinen, Armand & Gaston Lambic/Geuze. So, what is this beer style, exactly? Well, it's a pretty involved process and you could say a significant labor of love goes into it. A Geuze is a Belgian beer made by blending young and old Lambics. So, what is a Lambic? Egads! I lack the time and bandwidth for that interpretation. I will say this... A Lambic is typically associated with a specific souring process from Brussels, Belgium. It is brewed by a much different process, but most importantly noted is the fermentation process. If you like funky beers then I'm talking to you. Lambic is an open spontaneous fermentation that allows the surrounding environment to mildly dictate the direction of the beer. No yeast is added by the brewer, rather, the yeast is "collected" by the liquid from the open air. Pretty wild right? Well, yeah it is! Yeast is everywhere and it varies per region making it pretty special. This yeast falls into the beer and happiness begins. So, after x'amount of days of this natural yeast inoculation, the liquid is then transferred into holding barrels where it will grow and mature for a couple years or so. It is this process that makes the miracle. Every batch can carry it's own unique characteristics. So, what can you expect from a Lambic? Well, for a traditional Lambic/Geuze you can expect a bit of funk, mustiness, damp cellar or barnyard type taste. Some say it is very horse blanket like. At times it can develop subtle fruity notes on it's own. Folks, it is an experience much like a smelly brie or Bleu Cheese, in my opinion. I just re-read that and man-alive, have I NOT sold it!! LOL If you are down with the hard to acquire funk, then I'm here for you! This beer was bottled in 2018 and will continue to evolve. The enjoy by date is about twenty years from now so even if you are unsure now, you can get it and wait until you are!! If not, then I look forward to enjoying it all to myself. -Much to my wife's disgust.
