Am I the only one who wants to eat fish more often lately? I just plain feel better eating a beautiful piece of fresh fish. One key to a fantastic fish entrée is to get the highest quality seafood possible. I especially love fresh salmon.

THERE'S NOTHING LIKE FRESH SALMON

Salmon is versatile and delicious, and it takes just a few minutes to prepare in a way that will elicit an absolute “wow.” I especially love salmon for a dinner party! Here are a few of my favorite salmon preparations.

MY SALMON NIÇOISE SALAD IS ALWAYS A HIT

I began making salmon cakes since long before I was a food blogger. Onion, celery, and finely chopped red pepper give them a wonderful flavor and texture, and the trick is not to macerate. Leave a little bit of body and texture in there! This version is Whole30, but it’s out of this world whether you’re doing Whole30 or just enjoying delicious seafood. If you’re considering serving salmon cakes at a dinner party, it’s always best to ask guests in advance if they enjoy salmon, because some people are not at all crazy about it.

THESE SALMON CAKES ARE TO DIE FOR

Have you ever made Gravlax? It’s a Nordic way of curing salmon that’s so delicious and so special. It’s wonderful on an appetizer platter and not hard to make, but people will think that you are basically a rock star. Spectacular on a celebration platter but equally as wonderful with cream cheese on a bagel. It's served with dill, a squeeze of lemon, capers, and finely chopped onion. However you serve it, it’s fantastic.

DEFINITELY TRY THIS IF YOU HAVEN'T!

Truthfully, my favorite quick dinner or breakfast is sautéed salmon with greens, avocado, and a green vegetable. What a magnificent way to put together a very quick, high protein, healthful dinner.

THIS MAKES A WONDERFUL BREAKFAST TOO!

Fernanda’s favorite is salmon sashimi. Her keys to this dish are to buy the best salmon you can afford and thinly slice it. Marinate it in a bit of soy sauce or coconut aminos, then top with thinly sliced green onions and serrano or jalapeño peppers. To take it to the next level, heat up 2 to 4 tablespoons of olive oil and slowly drizzle it on top of the salmon to slightly sear. Sprinkle with sesame seeds or furikake and enjoy.

People always ask me why my fish is so delicious and what my genius tip is. This is primary: Any dish is only as good as your ingredients, so find a local supplier who can get you an amazing product. I’m so lucky to have Dirk’s Fish & Gourmet Shop in Chicago. Tip two: For the love of God, don’t overcook your fish!

In this episode, I sit down with nocrumbsleft’s kitchen manager, Fernanda Sacramento, to say goodbye and chat about our time creating recipes together. She’s truly been a bright thread in the tapestry of nocrumbsleft. It’s the classic “We laughed, we cried…” episode (I may or may not have cried at least twice).
