It’s almost November! Summer is truly behind us, and it’s time to surrender to comfort. That means something different to each of us: a beautiful cup of coffee, a warm blanket, a lovely book. Cozy evenings bring to mind the beautiful Scandinavian concept of hygge (pronounced HOO-gah) and encourage me to get back to basics. Hygee is all about creating a feeling of “being safe and allowed to let our guard down,” according to The Hygge Way: Pursuing Everyday Happiness.

For me, hygge is brought to life through delicious autumn eating. I’ve pulled together six of my favorite fall weeknight meals. They’re all excellent choices to create a cozy evening.

I LOVE MAKING RIFFS ON ROY'S PASTA DISHES

Sometimes nothing will satisfy but pasta. I’m so lucky that it’s Roy’s specialty. This Mushroom, Broccolini and Chicken Pasta is a riff on one of his magnificent dishes. When you make it for your family or friends, they’ll be convinced you’re a pasta superstar! Of course, pasta is always better served in a Roy Bowl. This dish can be made vegetarian quite easily.

If you’ve been following my Year of Health, you’ll know I’ve felt kicked in the ass this past month. Ongoing pain and difficulty walking have taken me to amazing levels of fear about my future health. As a result, I wound up in the ER. Here’s the good news: apparently, I have the knees of a 30-year-old, with no arthritis at all. The bad news is that I have a lot of unbelievably painful inflammation. I’m going to be OK, and I’m going to heal, incorporating physical therapy and acupuncture to aid the process. I deeply appreciate you joining me, especially on this part of the journey.
