Recently on Instagram, a pregnant working mom who’s also getting her doctorate asked me for ideas for meal prep and easy meals, sparking a conversation among Crumbles, too. I spend my life in the kitchen, so for me, meal prep is about cooking smarter and doubling recipes. Doing a lot of prep when you have time is my favorite recommendation for busy people who love delicious meals.

MAGIC ELIXIRS ARE ESSENTIAL FOR MEAL PREP!

My fantastic Whole30 Salmon Burgers and Chicken Paprika Burgers can be made in advance, refrigerated, and then sautéed as needed. I always top them with my Marinated Red Onions, which are the very foundation for all my meal prep, because they make everything that much more delicious.

PRO TIP: PREPARE AND JAR THE BURGER MIXTURE AHEAD OF TIME, ADD THE EGG AND ALMOND FLOUR JUST BEFORE COOKING

My very popular Heroine Chicken is another great do-ahead. You can actually turn it into four dinners! Marinate your chicken on a Sunday for 24 hours, and take it up a notch by doing two or adding additional wings, thighs, or other favorite pieces. Serve one chicken for dinner on Monday, and the leftovers will make spectacular sandwiches.

BAKE TWO CHICKENS––YOU'LL THANK YOURSELF

Add some leftover chicken to a last-minute chopped salad made with whatever produce you have on hand. It also makes a fantastic protein in a grain bowl. My Everyday Roast Chicken Breast works well in all these dishes too! If you’re afraid you won’t have leftovers, I will admit I’ve been known to hide food to make certain there will be some left over!

THE EXTRA CHICKEN MAKES A DELICIOUS SANDWICH

Another Sunday, cook a batch of rice, which will become a great base for a wonderful, improvised stir fry dinner or two during the week. When you’ve prepped in advance, it’s easier to be creative. Make sure you always have protein, vegetables, and a few of my Magic Elixirs ready to mix and match all week.

Italian Wedding Soup is absolutely one of my favorites! Teri Tip: Every time you make it, double the meatballs, sauté them, and freeze the extras for another meal.

DOUBLING THE RECIPE IS TWICE THE FUN!

When you make the mirepoix for the soup, double it too, and the extra can be the delicious start of another meal. In addition to being an opportunity for advance prep, the Italian Wedding Soup itself is simply delicious.
