I KIND OF LIVE FOR LUNCH

|
As a person who enjoys celebratory eating, there is nothing more spectacular to me than a festive, fabulous lunch. Certainly an everyday lunch can be lovely, and there’s nothing wrong with having a simple lunch dish in your repertoire that comes together easily, like a burger on a bed of greens with Marinated Red Onions and Green Goddess Dressing. But today we are focusing on spectacular.

LUCY LOVES CELEBRATION EATING––FOR EXAMPLE, CHEESE

Lucy puts a lot of energy into what kind of deliciousness to make for dinner every night. When their health coach asked, “What gave you the idea that every weeknight dinner has to be so special?” Lucy replied, “Have you ever met my mom?!” Needless to say, in our family, food has always been a celebration, and this week I'm delighted to share some of my most outstanding lunches with you.

MY EPIC SALAD

An all-time favorite lunch (for me as well as my favorite eaters) is my Epic Salad, which is truly…epic. Everybody should have a luncheon salad in their repertoire, something that works for a festive group or a party, something that can be brought to a lunchtime gathering that people will think is magnificent, something that will leave guests thinking you’re an amazing—ok, an epic—cook. I saved the recipe for my cookbook, and it’s a definite must-do. It requires a bit of work, but it’s absolutely worth it. The combination of hand-cut and fried tortillas, grilled chicken, matchstick cut carrots, and my Wasabi Lime Vinaigrette is superb.

ONE PLATEFUL IS NEVER ENOUGH OF THE EPIC SALAD
|
|
We certainly have a rich history with this dish. When my kids were growing up, I always made it for a moms’ night out. It might not surprise you to know that a moms’ night out quite commonly wound up at my home. The guests loved this salad so much that I actually did a cooking class for a group of moms to teach them how to make it. It’s a favorite for my friend Stephanie.

Sandwiches can be spectacular, and when you put special effort into curating each of the ingredients, you're bound to produce an incredible result. This Creamy Roasted Chicken Sandwich with Swiss Cheese and Coleslaw is a perfect example of that! I’m not saying you can’t buy some turkey slices, but it’s wonderful to take it next level with a sliced Everyday Roast Chicken Breast, served with an easy homemade coleslaw and a pickle.

It’s next level, and even more magnificent with some potato chips in it. It would be lovely to grill it, but for the amount of additional butter that would require, it’s actually nice to simply toast the bread and cheese in the oven. My neighbor, Melissa’s son Charlie, gives this sandwich rave reviews!

TERI'S ITALIAN SUB

Another sandwich I adore that is so easy, yet really, really yummy is Teri’s Italian Sub. I just had my neighbor Bill and his sons taste test it, and Bill said, “I don’t even have words for how good this sandwich is. I’m wrestling my own children for the sandwich. I don’t know what these flavors are, but they are partying in my mouth!”

It is certainly easy to pick up sliced roast beef, but there’s something about a mixed sub with mortadella, beef salami, and pepperoni with a peppadew pepper, spicy mayo, arugula, and Marinated Red Onions. It’s pretty much a masterpiece.

EVERY SANDWICH DESERVES AN INCREDIBLE SAUCE

Speaking of masterpieces, is there anything better than homemade bread with peanut butter and jelly? Simple, yet simply scrumptious. Dress it up by serving it on a lovely plate and using cloth napkins.

Roy loves making pasta and could do it pretty much every night, which is of course why we developed the Roy Bowl. He is that next level epic pasta maker. I did a riff on one of his pastas. It’s definitely not Whole30 or dairy free, but it is extraordinary and perfect for Sunday lunch. Here I used broccolini and trumpet mushrooms, and if you can find it, be sure to use a pasta like penne, with ridges that absorb the sauce. It makes a difference. This dish is an example of how I like to build flavors. It is a light dish, and the pasta becomes the hero. Finish it with lots of freshly grated Parmesan.

I always look forward to the weekend, when I have the time and energy to put together a lunch that feels truly special. Almost every weekend, I make my Asian-inspired Chicken Salad. To be clear, it’s not authentically Asian; it’s simply inspired by my favorite Asian flavors. I love the combination of cabbage, toasted almonds, clementines, and carrots with my Sesame Almond Dressing. Every single bite is simply delicious—that’s why I’ve had it six weekends in a row. It’s practically becoming my new salty and sweet epic salad!

A SYMPHONY OF FLAVORS AND TEXTURES

Yesterday we had it for lunch in the kitchen, and while previously I would have two helpings, in my year of health I’m enjoying only one, but I squirreled away a second portion for dinner. It’s crunchy, sweet, salty, and cheesy and pretty much a masterpiece.

PATRICK'S VEGAN FEAST
|

If you want a lunch that’s truly magnificent, head to the farmers market in the summer and buy fresh seasonal produce. Cook up your vegetables and serve them with hummus, my Garlic Tahini, or Cashew Crèma. I like to call this dish Patrick’s Vegan Feast, and you can find it in my cookbook. There is simply no food with more life force than vibrant vegetables that have absorbed the sun, rain, and minerals of the earth.

BEEF SUKIYAKI
|

I originally had this delicious dish when missionaries from Japan were staying with us. They made us a big pot of Sukiyaki, told us about their home in Osaka, and explained that this dish is meant to be shared and also at times to be used as a "clean out the fridge" meal. I've recently been learning more about other cultures’ cooking techniques and recipes, and Beef Sukiyaki has quickly become a favorite of mine because it’s easy, quick, and so flavorful! Some of the ingredients might be hard to find, and it's easy to substitute your favorite vegetables or other ingredients you have on hand. But try it with the dashi, because there's really no substitute for this flavor.
As part of my Sunday meal prep, I make a pot of chicken stock and a pot of dashi broth to have on hand for the week. Dashi is at the heart of a lot of Japanese recipes. It's not difficult, and there are even premade dashi packets you can just drop into boiling water (kind of like you're making tea). You'll need around 1-5 cups (depending on how many portions you’re making). That's probably the most difficult part of this flavorful recipe! Click here for the recipe!
