It’s so much fun to be gathering with friends and family again. There’s nothing I love more than deciding what I’m going to bring to a potluck. Of course, I always want to bring something that’s the total star of the show—I love it when people ooh and ahh over what I’ve made. Here’s the trick: bring something you can prep and put together in advance without taking up precious oven space in the host’s kitchen.

ASIAN CHICKEN SALAD IS EASY TO ASSEMBLE ONCE YOU ARRIVE
|
|
I love getting into the kitchen with the hostess and bringing out my Magic Elixirs and special ingredients and assembling my dish there. Generally, a certain amount of tension exists around getting everything onto the buffet, so I like to be available to help and add a little fun to the process. Here are some of my favorite assembly-only potluck dishes.

PANZANELLA SALAD IS A MUST HAVE!

|
Panzanella Salad is a fantastic dish, and although I make this beauty gluten-free, you certainly could use regular bread. It is so delicious, and people will devour it. Use a high-quality burrata, tomatoes, and cucumbers. I toast my bread at home in advance and assemble it all last minute. Bring each element in its own container. Drizzle with some lovely olive oil. This dish goes well with whatever is served.

As a gluten-free person, I always want to know that there’s going to be something I can eat, and this Whole30 Chopped Salad is perfect when you’re doing Whole30 or if you know you’re gathering with a low-carb crowd.

THIS BLUEBERRY LEMON LOAF IS SURE TO MAKE A HAPPY POTLUCK!

Recently, I’ve been making a gluten-free version of this Blueberry Lemon Loaf. I originally received it as a gift from my neighbor Jason, and it’s a spectacular New York Times recipe by Yotam Ottolenghi. With just a few simple adjustments, we made it gluten-free, and it is dangerous! Nobody would know it’s gluten-free, and it’s certainly easily made with gluten if you prefer.

THIS ASPARAGUS IS CALLING YOUR NAME

Now is the season for asparagus, and California Asparagus with Zesty Garlic Tahini Avocado Dressing is so easy to do in advance. Bring the dressing and pistachios and assemble right before it’s time to eat. Teri Tip: prepare the asparagus just before you leave the house, and don’t cover it tightly with plastic wrap (otherwise it will steam and possibly overcook).

LOOK NO FURTHER THAN MY ASIAN CHICKEN SALAD

This spectacular Asian Chicken Salad happens to be Whole30, but you’d never know it when you eat it. This salad is absolutely one of my all-time favorites. I prepare it on a Thursday and bring the individual elements in jars to Michigan. All I need to do is toss it for an absolutely amazing Saturday or Sunday lunch.
