PREPARING TO BECOME VACATION TERI

A snack is a wonderful reset and a great way to give yourself a little love. I’m taking a “snack break” of sorts next week. I will be out of town, unplugged. I’m ready to soak up some soul sustenance in the form of rest. To honor the idea of taking a replenishing break, and because Crumbles have been chatting so much about snacks lately, I wanted to share a few of my favorites here. Who doesn’t love a mini meal?

PICKLES
SALAMI AND PICKLES ON A SAPPHIRE MOLLY PLATE

First of all, I love anything that involves a pickle! Whether it’s homemade (like my fabulous Refrigerator Pickles recipe) or store-bought, they are simply delicious and a good snack on their own or with some salami.

EVERYDAY ROAST CHICKEN BREAST
EVERYDAY ROAST CHICKEN BREAST IS A PERFECT SNACK

I like to keep an Everyday Roast Chicken Breast on hand, along with a Magic Elixir for dipping. During my year of health, I’ve been focusing on nutrient-dense meals and enjoying fewer snacks, but when I do, a slice of chicken on a bed of greens topped with olives, avocado, and Marinated Red Onions is so satisfying.

I LOVE SUPREMED GRAPEFRUIT
I absolutely love supremed grapefruit, which involves removing the skin then cutting between each section to create beautiful slivers of fruit. I keep a jar in the fridge, and it is one of my favorite snacks.
APPLES AND ALMOND BUTTER

Speaking of fruit, a thinly sliced apple and a couple teaspoons of almond butter is a simply delicious combination.

I love California Prunes, too! Their bad reputation is undeserved and outdated, and it’s time to update our point of view. Five prunes have only 100 calories and make a truly delicious snack that happens to be great for gut health, joints, and bones. Have you tried one lately? They’re delicious, moist, and chewy.

Have you made my Sheet Pan Granola With California Grown? It is rich and tasty and so easy to make and keep in jars. Even just a bit of granola is so satiating.

SWEET POTATO WEDGES WITH GUACAMOLE

Vegetables also make great snacks. Sweet Potato Wedges tossed in olive oil, salt, and pepper, then roasted and served with guacamole or a handful of pistachios is such a healthful, nutrient dense snack, as are my Spicy Cauliflower and Green Beans Almondine from my cookbook. Make sure to give your green beans a really good sprinkle of salt and don’t skimp on the browned garlic or the almonds. Babaganoush from the Middle Eastern store is inexpensive and great for dipping celery and carrots.

Our team member Molly loves a little charcuterie platter with pickles, meats, and cheeses—a beautiful presentation makes a snack even more appealing. Although the charcuterie platter pictured here is certainly more abundant than most snacks, you can always make your own mini charcuterie platter with the things you've got in your fridge or pantry.
SALADS GALORE
MY CHICKEN SALAD IN A MOONDUST EVERYTHING BOWL

Tuna salad, egg salad, chicken salad, and (after Easter, in memory of my mom) ham salad are all favorite snacks of mine. Let’s face it, these concoctions are absolutely divine on a cracker, but I’m limiting my crackers these days, so any of these in a bowl topped with a bit of Marinated Red Onions is a truly fabulous high-protein snack without the carbs. Crispy sliced cucumbers are another wonderful alternative to crackers.

Have you made my egg salad from the cookbook? I’m not gonna lie: it is amazing. The technique of shredding the eggs with a box shredder is a game-changer, and finishing them with chopped celery, chive, and onion creates a magnificent result (provided you don’t overcook the eggs). My kids always had a fresh jar of egg salad in the refrigerator growing up; we called it Lucy’s Egg Salad because it’s one of their favorites.

DEVILED EGGS ARE SO DELIGHTFUL ON A LUCY PLATTER
There’s nothing more tempting for my fellow egg lovers than deviled eggs, and they’re so easy! Simply hard boil a few eggs until the yolks are yellow (not green), peel them, cut them in half, scoop out the yolk, smash the yolks together, then mix with one of my fabulous new Magic Elixirs, like Peppadew Pepper Sauce from Teri's Italian Sub or the Honey Mustard from my Roasted Chicken Coleslaw Sandwich.

MINI ITALIAN SAUSAGE MEATBALLS
MINI MEATBALLS IN MY MADEIN NONSTICK––CAN I GET A HELL YES?

Here’s another great snack: remove an Italian sausage from its casing and form mini meatballs the size of marbles. Sauté them until they’re nice and brown, then freeze them so that you can thaw a few whenever you need a snack or want to add them to soup.

SNACKING IN MY FRED BOWL

Lately, my favorite snack has been little bowls of soup. Soup got me through Whole30! I tend to make a pot twice a week and always have quarts in the fridge. I love to enjoy a little Italian Wedding Soup or my Spicy Chicken Soup or my Green Minestrone Soup with mini-meatballs. Soup is a nutrition packed snack. I serve mine in a small bowl for portion control.
