At this time of year, you can almost taste spring in the air. Now is the time to re-energize our cooking to celebrate the change of seasons.

THIS ONION SOUFFLÉ IS SUBLIME

 I can’t think of Easter without thinking about my Onion Soufflé. It’s light, it’s pillowy, it’s fantastic, and everybody absolutely loves it—even supposed onion haters! Onion Soufflé can be the cornerstone of any meal. Slice and sauté the onions the day before, which takes care of the lion’s share of the work. In truth, this festive dish is a bit of work, but it’s so worth it. It goes with absolutely anything: ham, roast beef, fish, or poultry.

WE LOVE A SPRING SALAD!

My favorite dish for spring eating is a Niçoise salad, like my Tuna Niçoise. There are so many versions, and it’s fun to give it a little bit of a left turn. Typically, this salad includes tuna, potatoes, green beans, onions, anchovy, and dressing, but one of my wonderful versions features Salmon and Sweet Potato Crisps. I also love my old-school variation that features my Creamy Chive Vinaigrette. There’s also a Shrimp version, and this classic can easily be made with steak, chicken, or tofu. I love this salad for a light Easter meal.

SIMPLY NOTHING BETTER THAN A FRESH BERRY CRUMBLE

As the season changes and rhubarb is one of the first vegetables to grow, a favorite way to let it shine is this delectable Strawberry Rhubarb Crumble. It’s so delicious and easily made vegan. It happens to be gluten-free, and by the way, it’s lovely for Easter morning breakfast or brunch.

THE PERFECT EASTER BRUNCH

What about this beautiful Easter platter with slow roasted pork and my Creamy Horseradish Sauce made with skyr and sprinkled with spring vegetables like peas, asparagus, potatoes, and radishes? It’s a twist on a favorite and such a great way to feed a group.
