EVERYTHING ASPARAGUS!

READY FOR ASPARAGUS SEASON

It’s already June, so there’s only a little bit more time to enjoy perfectly in-season asparagus. As a seasonal eater, I serve asparagus strictly in the spring and early summer. Eating produce in season is one of the best ways to help local farmers, the planet, and your own body.

ASPARAGUS IS DIVINE
Asparagus is a magnificent vegetable that’s best prepared simply. It’s delicious roasted in the oven, grilled, or sautéed. Blanch it ever so slightly to retain the crispness and color, or cut and pan fry it and finish it with a little bit of brown sugar, sautéing just until the sugar caramelizes.

Now is the perfect time for blended asparagus soup like my Summer Green Soup. Sauté the asparagus with onions or leeks, and when it’s nearly done, blend it all with chicken stock and a squeeze of lemon for some velvety goodness, or keep it vegan with vegetable stock.

A Spring Minestrone is a fantastic way to use asparagus. Add rice or pasta and other vegetables but be sure to keep the asparagus crisp by adding it at the end.

I love the magic of risotto making, and although we’ve included a recipe,  it’s really all about standing at the stove, stirring continuously, and adding broth a bit at a time until the rice opens. Creamy Asparagus Risotto is delicious finished with butter and Parmesan, and this time we snuck in a few peas. If you’re going to go to take the time to make risotto, absolutely use a homemade chicken stock and take it up another notch with a squeeze of lemon at the end. A Teri Tip: barely blanch the asparagus so it’s crisp, and add it at the end. What a bright and lovely spring meal.

A simple whipped ricotta toast can be sublime. Toast your gluten-free bread while you roast the asparagus. Just spread the toast with ricotta, add the roasted asparagus and finish it with a bit of olive oil.

Asparagus is fantastic in a frittata or topped with a poached egg. It is lovely with shaved Parmesan as a side dish or even as a main course, served roasted with my Zesty Garlic-Tahini Avocado Dressing and topped with a sprinkle of chopped pistachios.

So many people use asparagus in a savory spring tart. It’s satisfying on its own and spectacular paired with cheese. One Crumble mentioned a spring farmers market salad with asparagus, sheep’s milk feta, fava beans, and mint.

Pistachios, Parmesan, arugula, and avocado with a lemon vinaigrette make this dish light, lovely, and delicious.
