We’ve been having so much fun posting salads lately that I wanted to share a few of our favorites here. You may have heard me say that a salad is only as good as its ingredients, and it’s true! A salad is all about curating each element, which will transform it from ordinary to extraordinary. In truth, salads are pretty much my favorite food.

TERI'S EPIC SALAD FROM THE COOKBOOK IS MY SIGNATURE DISH

They’re just so crispy and delicious. And when done correctly, they always have a little surprise, like something salty, crispy, possibly sweet, and a lovely dressing. I like the idea of salads as a lifestyle. In a salad, there’s something for everyone. Truly special and delicious salads are not only good for your heart--they’re good for your soul. Here are four favorites I hope you’ll consider making.

MY SPICY POBLANO STEAK SALAD

Steak Salad with Spicy Poblano Dressing is a lovely choice for spring. We used skirt steak, but honestly this would be delicious with whichever cut you prefer. It’s a masterpiece on a bed of greens with avocado, radishes, jicama, and Marinated Red Onions. And my Spicy Poblano Dressing is so refreshing!

MY TOSSED VEGAN SUNDAY SALAD

I am absolutely in love with my Tossed Vegan Sunday Salad. Originally, I created a spectacular antipasto salad, but when the holiday was approaching, I realized this would be perfect for our vegan Christmas dinner. The reality is it takes quite a few ingredients and some prep to get it to the table, but this salad, served with my Vegan Charred Scallion Dressing, is a 10 out of 10! It's amazing for a family gathering.

MY SUMMER RADISH SALAD

My Chicken Finger Salad with Grapefruit Lime Vinaigrette is a recipe from the cookbook that just might be a little underappreciated. It’s Whole30 and a must do. Chicken dusted with paprika-spiced almond meal is sort of a revelation! We also include avocado, chopped peppers, pepperoncini, red pepper, and my Marinated Red Onions. MY FABULOUS CHICKEN FINGER SALAD

I’ve always loved chicken fingers, and I made them for my kids throughout their childhood. I wanted to create a Whole30 version, and it is excellent. If you’ve never made homemade chicken fingers, check out Patrick’s Chicken Fingers in the cookbook. They are just so lovely, and pairing them with a bed of greens and a tangy citrus dressing somehow makes them feel a little less naughty.

MY SUMMER CELEBRATION WEDGE SALAD

My Summer Celebration Wedge Salad is perfect when corn is in season. Beautiful greens and chicken chunks, shrimp, tomatoes, crispy bacon, and summer corn combine to hit all the right notes. Creamy Charred Scallion or Creamy Chive Citrus Dressing just take this dish over the top.

MY LEGENDARY MARINATED ONIONS

What’s my favorite thing to put on top of salads? You probably won’t be surprised when I say my Marinated Red Onions. I’ve used this simple condiment since my kids were little as an addition to a Greek Salad. The ingredients are so simple. We called them counter onions then, because they live on the counter, and I enjoy them with just about everything. Even if you think you’re not crazy about onions, give this easy recipe a try, because they mellow out considerably when marinated.
