I love a lazy weekend that includes a delicious breakfast. During the week it’s hustle, hustle, so it’s nice to relax on the weekend and make something truly wonderful. When my kids were little, my favorite day was Saturday. We had a group of kids sleeping over almost every Friday night, so Saturday meant waffles or pancakes and going next level. As you can imagine, all the kids wanted to sleep at our house. Truly, my happiest mothering moments were being in the kitchen on a Saturday morning, enjoying time spent cooking for the kids.

Pancakes—who doesn’t love them? They’re certainly not an everyday food, but they do make a weekend pretty delightful! This gluten-free version from my No Crumbs Left cookbook has buttermilk, oats, and chocolate chips and is simply scrumptious.

I love a breakfast pizza. There are so many spectacular store-bought crusts, both gluten-free and regular, and you can put together something lovely with eggs and bacon. Imagine a poached egg topped with arugula and Marinated Red Onions, or this lovely fig pizza, so simple and totally a home run.

WHAT COULD BE BETTER THAN FRESH FRUIT?

Here's a relatively simple one which is great for breakfast or wonderful as part of a buffet. It’s as delicious as it is beautiful: Papaya or melon stuffed with fresh fruit with a dollop of skyr or Greek yogurt, then taken next level by sprinkling with hemp seeds, chia seeds, nuts, coconut, granola, and cacao nibs.

Everyone loves a breakfast sandwich! My Current favorite is my Ultimate Breakfast Sandwich. I begin with an English muffin, (Trader Joe's has a great gluten-free English muffin) a most amazing, underrated and life-changing invention. We loaded this beauty with softly scrambled egg, cheese, and sausage, then topped with my Marinated Red Onions and chives. My favorite thing about breakfast sandwiches are how versatile they are, so poke your head in your fridge and make one with what you have!

If you’re looking for something delicious to make for this weekend, this Gluten-free Lemon Blueberry Loaf is amazing! My dear friend Jason gave us a loaf a couple Easters ago, and I’ve been thinking about it ever since. We created a gluten-free variation from a recipe by Yotam Ottolenghi and added icing—it’s delicious glazed, but just as good without. As a gal who likes dessert for breakfast, I must say this is lovely.
