I love the idea of no-cook eating on a hot summer day. There are so many options, but I’ve had a hankering for an ice cream pie ever since I started my year of health. The one I imagined would be absolutely delicious, versatile, and refreshing without feeling like junk food. This week, we created it! I couldn’t believe how easy and delicious our no-bake dessert turned out to be: it actually comes together in minutes!

CHILL OUT WITH ICE CREAM PIE

As a gluten-free person, I find most of the available pie crusts just aren’t delicious. Sometimes eating gluten-free simply means creating a version you love. I didn’t want to start with a classic Oreo cookie for the crust; I wanted to find something a little more healthful. I discovered a pretty wonderful gluten-free chocolate sandwich cookie that was spectacular when paired with chocolate peanut butter ice cream. Who in the world doesn’t love that combination?

We also made a version using a coconut almond ice cream with chocolate shavings, and it, too, was beyond amazing. The sky’s the limit with the enticing combinations. It’s such a fun dessert to make with kids, and everyone will find the creamy, dreamy deliciousness sublime at the peak of summer! My advice is to skip dinner and just have dessert, because an occasional fun dinner like this is so good for the soul. And guess what? We just happen to have the recipe available right here!

OUR BERRY VERSION WAS DIVINE

Gluten-Free Ice Cream Pie
Yield: one 9 – inch pie
Prep Time: 5 minutes
Cook Time: 0 minutes
Total Time: 45 – 60 minutes
Ingredients
24 gluten-free chocolate creme sandwich cookies, we used Goodie Girl
5 tablespoons unsalted butter, melted
2 pints of ice cream, your choice (delicious with coconut almond chocolate, chocolate peanut butter, strawberry or butter pecan) Chocolate bar shavings, for garnish

YOU'RE GONNA WANT TO MAKE THIS PIE!

Description:
In a food processor, pulse the chocolate creme sandwiches until completely crumbled. Pour in the melted butter and continue to pulse until all is incorporated.

BUTTERY GOODNESS IS AN ESSENTIAL INGREDIENT
|
|
Transfer the cookie and butter mixture into a 9-inch pie pan, disposable aluminum or glass is fine. Form the crust by using your fingers to press the cookie mixture onto the bottom and sides of the pan. You can press it just up to the rim or go a bit over. Once the crust is ready, place in the freezer until hardened, for 15 – 20 minutes.

THIS STEP IS SO FUN
|
|
Remove from the freezer. Working quickly, scoop the ice cream onto the crust and use a spatula to smooth out the ice cream evenly over the crust. Return the pie to the freezer until completely frozen, 30 - 40 minutes or overnight.

HOW COOL IS THIS?

|
Remove, and add the chocolate shavings or garnish of choice and serve.

TOMATOES ARE A NO-COOK CLASSIC
|
|
Here’s another no-cook summer favorite: a tomato sandwich. Start with beautiful bread, mayo, basil leaves, and perfectly ripe salted tomatoes. Whether you toast your bread with butter or use a soft bread with mayo, this sandwich joyfully proclaims, “It’s the middle of summer, and I’m having a no-cook dinner!”

Another wonderful idea is my Tuna Treasure from the blog. What’s more delightful and sumptuous than tuna poke? If you’re in a hurry, ask the person behind the fish counter to cube your tuna steak for you. It’s a great timesaver.

And let’s not forget the classic BLT. If you take the time to curate each ingredient, a BLT is simply the best summertime feast. Use crisp oven bacon cooked well in advance, beautiful bread, mayo, and crisp greens or basil leaves. Take it up a notch with sliced avocado or an egg.
