SPRING IS HERE

As a seasonal eater, I simply love when the long winter ends and we slide headfirst into spring produce and the joys of strawberry season. Early summer, when the berries are so juicy and delectable, is the moment to embrace them. They remind me of love and Valentine’s Day, which is not surprising, because they are considered the symbol of Venus, the goddess of love. Strawberry season started this month but peaks in June and July. Get yours locally, because the fresher the berry, the better the berry.

STRAWBERRIES ARE PURE MAGIC

A couple Teri Tips: If you get them at the farmers market and you plan to eat them that day, don’t put them in the refrigerator. They lose a bit of something in the fridge. If you’re lucky enough to go strawberry picking, remember to pick them at their ripest, because they do not continue to ripen after picking. Surprisingly, smaller berries often have more flavor.

A STRAWBERRY FRUIT PLATE IS DIVINE

Storing strawberries can be challenging, because they can go from absolutely perfect to overripe in a day. When that happens, simply muddle them in a bit of sugar. Do not wash them until you’re ready to eat them, because moisture sticks to strawberries and makes them mold faster.

CHOCOLATE COVERED STRAWBERRIES MAKE A PERFECT DESSERT

So many berries, so little time to enjoy them perfectly ripe. Strawberry shortcake was one of my dad’s favorites, and Lucy loves it too. The beautiful thing about this dessert is that it can require nothing more than assembly. Whether you use biscuits or angel food cake, it’s really all about layering sliced berries onto the base along with slightly sweetened whipped cream, then topping it all with more sliced strawberries.

NOTHING BEATS STRAWBERRY SHORTCAKE

This week we came up with the most fantastic new Cobb Salad by turning the original on its side just a bit in a truly scrumptious way. To celebrate the season, we really wanted to bring strawberries forward, and we came up with this lovely salad that features hunks of thick-cut bacon, gooey eggs, avocado, chunks of chicken, baby Romaine, and a sumptuous Creamy Strawberry Chive Dressing. I can’t wait for you to get cooking.

OUR GENIUS NEW STRAWBERRY COBB SALAD

Strawberries pair beautifully with balsamic vinegar. Reduce the balsamic in a pan by simmering it over low heat and top the berries with it. Whether you’re serving ice cream or yogurt with berries, this balsamic drizzle makes an everyday dessert magnificent.

I'M A GAL WHO LOVES A FRUIT BOARD

Strawberries make summer beverages even more wonderful. Add them to lemonade or create a spectacular fresh strawberry shake by using delicious ice cream, whole milk, and really fresh berries. What better way to celebrate the season?

WE LOVE THIS EASY-TO-MAKE STRAWBERRY PARFAIT FOR KIDS

Strawberry Caprese with Burrata and Balsamic is a simple, no-cook summer dinner. Start with a bed of arugula drizzled with olive oil and an aged balsamic, then add pepper and some basil. Break up the Burrata a bit, surround it with strawberries, then drizzle everything with more olive oil, aged balsamic, and add another grind of pepper. It’s as easy as can be, truly scrumptious, and an absolute mood lifter. And by the way, don't even get me started on strawberry jam.

My very favorite way to celebrate strawberry season is Strawberry Rhubarb Cobbler. It is sublime. You may need more or less sugar depending on the sweetness of your rhubarb, but it’s a dish you should certainly consider making.

STRAWBERRY RHUBARB CRUMBLE

Strawberries have a short lifespan, so let’s go all in while they’re flourishing. Keep it simple. Frankly, you can enjoy them alone with whipped (or unwhipped) cream, or with granola. Whatever you choose, enjoy the heck out of them.

EVERYDAY ENTERTAINING
FEELING GREAT IN MY YEAR OF HEALTH

Today is day 145 of my year of health, and my current area of growth has been to let go of the diet culture mindset. It’s never supported me, and what I’ve been practicing works better. I’ve had the opportunity to travel and am working on how to do that while eating smaller portions of wonderful food while focusing on not overeating. This next month I’m diving headfirst into food freedom. I’m absolutely delighted that my friend Stephanie is leading a Food Freedom program, and I'm attending as a paying participant. We’ve just begun, so it’s not too late to join this fantastic, supportive and transformative group.
