I would never have guessed we’d do an issue about limes! When most people think of limes, guacamole and tequila are all that come to mind. Certainly, those are two ways to use them, but there are so many more. It’s time to broaden our association of what we think of when we think about limes, so pucker up!

GORGEOUS LIMES

I love limes! I delight in infusing my food, my water, and many of my salad dressings with a squeeze of lime. We’re just entering lime season, which for me is a reason to celebrate. Limes are in season from about May to October. I like their tart and refreshing flavor, whether they’re Key limes, Persian limes, kaffir limes, or desert limes.

MY WHOLE30 SPICY CHICKEN SOUP WITH LIME

A bit of lime juice brightens up soups, salad dressings, cocktails, and tacos. Limes also happen to have plenty of potassium and Vitamin C. Native to India, one lime tree can produce as many as 1000 limes annually! This week I’ve included some of my very favorite ways to enjoy them.

COCONUT LIME VINAIGRETTE IS A FANTASTIC ADDITION TO SO MANY DISHES

Limes are a great addition to my Whole30 Spicy Chicken Soup and Thai-inspired dishes. One of my most under appreciated Magic Elixirs is my Coconut Lime Vinaigrette. It comes together deliciously with lime, cilantro, and mango, to name a few. It’s fantastic simply to enjoy with arugula or over my Whole30 Chicken Taco Salad. The crunchy jicama slivers are spectacular dipped in this vinaigrette.

I love these Key Lime Cookie Cups with Icelandic Provisions. They’re perfect when the weather is warm and so much fun to make with kids. My very easy recipe can be made gluten-free or regular, and everyone devours them. Sometimes I enjoy having just a bite of dessert, and these cookie cups are the perfect bite.

Another favorite from the blog is my Picante Shrimp Salad with Lime Caesar Dressing. This dressing is another Magic Elixir that’s great to keep in the fridge to eat on repeat. It’s a spectacular way to usher in spring. Drizzle it over a platter of cucumbers, baby greens, sunflower seeds, and avocado.
