I adore a beautiful piece of fresh fish, cooked to perfection. Preparing fish can be a bit of a mystery for newer cooks, from what to buy to where to buy it to how to prepare it. What I love about fish is that it can be so simple, yet so delicious. This week we created four easy, single-serving fish recipes, perfect for the beginning fish cook. Our intention is to jumpstart the creation of your own uniquely delicious fish dishes.

FRESH IS BEST!

Any dish is only as good as its ingredients. People always ask me why my fish is so delicious, and it’s because I have a spectacular purveyor, my friends @dirksfish. Dirk has become part of my foodie community, and I love getting products from him. For the highest quality seafood, find a quality fish market and build a relationship with the staff. If you've never bought fresh fish, let the fishmonger or person behind the counter help you learn what signs to look for in order to find the freshest options available.

MY SALMON CAKES ARE A CLASSIC MUST-MAKE RECIPE

When shopping for fish, remember that fresh fish doesn't have a "fishy" odor. A fish should look as if it might jump up and swim away. Clear eyes, bright-colored gills, and firm, bright skin mean the fish is fresh. With filets, avoid discoloration or a slimy surface.

SIMPLE PREPARATIONS ARE DELICIOUS

While doing Whole30, I focus on refreshing, delicious dishes. This Salmon is brought together quickly using a super simple marinade. With the combination of coconut aminos and a bit of sesame oil, it’s a two-fer, because you’ll use it on both the fish and the avocado.

THE MARINADE IS KEY TO THIS DISH

Wild-caught fish is so much better for the world and for your body. I suggest finding a fish native to where you live. For me, that fish is a spectacular Lake Superior perch. Perch are delicious with a little salt and pepper and next level with Spice House’s Parisian Shallot Salt-Free Herb blend. Absolutely don’t overcook perch (or any fish)! These take only 2 to 3 minutes per side.

Here’s Fernanda‘s favorite method for whitefish. Drizzle fish with olive oil, Marinated Red Onions, lemon, and cherry tomatoes and place in a foil packet. Bake your fish packet in the oven for about 15 minutes, and while it’s cooking, sauté yourself some broccolini. This recipe is so versatile: You can add whatever you want to the packet, like a variety of fresh herbs, coconut aminos, salt, or garlic, to name a few.

Here’s Roy‘s favorite: Make a paste using equal parts mayo and Parmesan cheese and slather it on a beautiful piece of cod, halibut, or salmon. Spread it gently and evenly then bake for about 12 minutes or until the paste has formed a golden crust.

A few keys to cooking fish: Get yourself a nonstick pan. These Made In pans are amazing as well as non-toxic and are perfect for delicate tasks like preparing fish.

KEEP AN EYE ON YOUR FISH!

Finally, remember these five tips: Begin with a great, fresh product. Find a local fish you love. Let your eyes and nose be your guides. Never overcook. And don’t forget my sublime Tarragon Tartar Sauce, which is the perfect accompaniment to any fish.

One last fish story: My mom wasn’t crazy about cooking, but my dad was a bit of a food scientist who also loved fishing. He made amazing fish fingers and had figured out the exact temperature to cook the fish to perfection. Fish cooking is an ideal time to develop your kitchen confidence. Jump on in and begin. There are so many easy, delicious ways to cook fish!
