Tu BiShevat, (the15th of Shevat), the new year for the trees, begins on Wednesday evening, January 27th. In ancient times, the fruits of trees that blossomed after the 15th of Shevat were counted as belonging to the next year for purposes of tithing. To celebrate, we eat a tree fruit that we have not yet tasted this seasons, reciting the bo-re peri ha'etz and the shehecheyanu b'rachot. Other customs include holding a Tu BiShevat seder and eating fruits from Israel. We also use this holiday to plant the parsley we intend to use on our Pesach seder this coming spring.
