Happy Holidays from Kim at 8 Hands Healing!

It seems the holidays are centered around food and the gathering of friends and family to enjoy it together. If you're gluten free, dairy free or anything-else free you know how difficult it can be to cook for everyone and accommodate their food sensitivities. Gluten-free cooking, especially while eating out, can be especially difficult. Believe me, I know this first hand. With that in mind, I created a card to carry with me that would clearly list my allergies.

Available soon in the 8 Hands office are some gluten-free (GF) cards the size of a business card. You're welcome to take some with you to share with your waitstaff while eating out, a dinner host or just share with someone who is beginning their gluten-free journey to help make eating out easier. It includes the different alcohols that typically contain gluten as well. I wish you a joyous (and perfectly-digested) Christmas season and a safe New Year!

Kim's New Favorite Pie Crust

Gluten and Egg-Free Crust?

While making pies for our Thanksgiving dinner I discovered a wonderful way of making a gluten-free and egg-free pie crust. I found this modification to a mix to work very well. I hope you find this helpful!                                                                    

I used the Glutino pie crust mix. The recipe on the box calls for eggs, but instead, I used a mix of 2 Tbs. of ground chia seeds and ½ cup of cold water which = 2 eggs. It gels quickly, so I added the vinegar right away and then added it directly into the flour/butter mixture (find the remaining recipe on the box).

If you've tried making gluten-free pie crust before, you know it can be very difficult to roll it out, let alone get it in the pie dish and have it look decent when you’re done. However, this mixture rolled out beautifully on my flexible mat and I could actually hold this crust in one hand while maneuvering the pie dish. It tasted great and held together well.

The ground chia seed is my new favorite egg replacement for all my recipes. May your baking be fun, flavorful and allergy-FREE this holiday season!

Kim is teaching at Oregon School of Massage!

Know any LMTs or bodyworkers looking for continuing ed hours/classes? Kim will be teaching Cupping Massage: Theory and application in February.  

This 14-hour class is for licensed body workers or students currently enrolled in massage school. There is close to 8 hours of lab time to ensure the student is comfortable doing safe and effective cupping massage.
