Summer Cheese Travels

Hope you're surviving the Summer so far! It's way too hot to be making cheese!

Let someone else do the cheesemaking for you! This month, we're having guests from Isigny Ste Mere and Aniata Cheese Company present at our August 16th meeting! I can't wait to learn about their cheesemaking processes and I hope you'll join us!

July meeting recap: Honoring winners of the SD Fair Homemade Cheese Competition + Cheeses of Israel

June was a delicious event! Who knew one could get sick of cheesecake?! 
Members got creative with their cheesecake creations, bringing both sweet and savory cheesecakes! 


There's Tony Edwards with all his wins on the far left, Jessica in the middle who won first for her Humbolt Fog, and Alyssa Humbert (2nd from the right) whose flavored chevre won first!


Curt gave a wonderful informative and delicious presentation on Cheeses of Israel and his travels through the region! Thanks, Curt!

Interview with a Cheesemaker: Ricki Carroll

Many of us successfully use Ricki Carroll's book, Home Cheese Making, to create wonderful cheeses, while others probably know her kits from New England Cheesemaking Supply Company. She's the Cheese Queen! She's also a great supporter of Queso Diego and just an all-around gracious and generous woman.

Why and when did you begin making cheese? 
We started in 1975 with our first goats, Dina and Rinalda, we first did not get much milk after a short time, we had more than we could drink. We started to experiment, one thing led to another, our fridge got filled up with cheese and information to go farther was hard to find. Supplies were almost non existent so we started to look overseas and founded New England Cheesemaking Supply Company in 1978. 

What’s your favorite kind of cheese to make?
Currently, some easy ones, I love to make Mozzarella, because I can bring it to a party and it is gone in minutes. I also make a lot of Fromage Blanc to stuff in dates with lemon zest and mint, this also is a real party pleaser. 

What’s in your cheese cave right now? 
Colby is in Sarah's Cave, since she is taking over the cheese making from me. She is the next generation and has been working in the business for over a decade now. 

What's your favorite food made with cheese? 
I like most of my cheese straight up but if I had to pick one it is truly the dates stuffed with either Fromage Blanc or Mascarpone.

What kind of farm do you have? What kind of livestock and how many?
I live in the middle of town on Main Street and do not have a farm. I have 4 acres and when I first moved here 41 years ago, we had Goats, Geese, Pigs, Chickens, and then a Cow. My barn has since been converted into a performance art space which keeps me busy. I no longer keep livestock. 

Have you thought about selling your cheese?
Only before we started New England Cheese Making Supply Company, we were thinking of Selling Feta but never went into it because there were no small scale supplies available anywhere in the country to us or to others. We saw a larger need to bring supplies into the country so people could get them to use their milk rather than dump it. Many Artisanal cheese makers of today were started because of what we were able to do.  
 
Are there any cheeses that have proven too challenging for you to make?
Under the proper conditions you can make just about anything at home. You do need a space where you can age your cheeses with the proper temperature and humidity. And patience if at first it doesn't come out just right, we can help you perfect it. 
 
What advice can you give to cheesemakers who have been struggling to perfect their cheeses?
Write to our tech department through our 'contact us' section online and we will help you through any problems you are having. Keep notes (a make sheet) on what you are doing while making your cheeses, it allows you to describe what you have done so we can help you figure out quickly what changes will help you. 

Do you have a triumphant story about cheese making that can give us amateur cheese makers some hope?
Once when I was teaching a class of 65, I had a failed Mozzarella, luckily I had brought more milk and made it again. I asked all the people in the class no matter what their religious affiliation to start praying, they started to Om and the cheese stretched right across the room. It turns out my classes like to see a failure every once in a while because they are then able to see how to fix it right in front of them. 

Other than cheese, what are your other hobbies and interests?
I am an artist by nature, I have large flower gardens which I weed by hand, I volunteer weekly at a soup kitchen and love the fast paced work there. I sing in a chorus and host a summer singing camp for kids. I create space for musical weekends at my home since I am also an event planner and nothing is too big or too small and everything has some cheesy aspect.  I decorate hospital rooms and create hospital humor for friends with cancer and other maladies. I am a home organizer because I love to see the transformation. I have volunteered for many years in local Town politics on the Finance Committee and Personnel Board. Oh yes, I love being a Mom and now a Grandma, hurray, life is good.

Fun Facts about Ricki - She helped start the American Cheese Society, New England Cheese Making Supply Co contracts their cheese making kit building to a VA program called the Compensated Work Therapy Workshop, her mother was Mayor of Englewood, New Jersey, her wedding cake was made out of Humboldt Fog!

For our September meeting, we invite everyone to bring a homemade cheese! It's time to show off what you've learned from attending meetings and classes by Queso Diego, and get feedback on your cheeses! Whether quick and simple (ricotta, mozzarella, chevre), or complex cheeses aged for a long time (get started now!), we're a cheese-MAKING club, so show us what you've got!

December Holiday Party

Every year in lieu of our usual monthly meeting, we use the December meeting for our holiday party! I know it's really early to start thinking about it, but considering how close our usual meeting is to Christmas, Chris sent out an email asking everyone which date works best. Tuesday, December 13 has been selected for this year's holiday party:

This party is a potluck and we'll also be having an Opportunity Drawing to raise funds for our club!


Cheese Recipe of the Month

Are you going camping this Summer? Raclette is the perfect camping cheese! It was traditionally eaten by cow herders who would take the cheese with them into the mountains while moving their herds. They'd roast the cheese beside the campfire, scraping it onto pieces of bread, mmm!
